Broccoli Chicken Casserole With Quinoa Recipe





Another casserole recipe! :) This one has evolved over the years for me. I've gotten creative and changed some ingredients gradually, so it's very versatile! 
Feel free to make it as creamy or healthy as you want! 


Ingredients:

1 can cream of chicken soup
1 can cream of mushroom soup
1-1/2 cups cooked chicken
1/2 cup sour cream
1/4 cup milk 
1 cup cheddar cheese
1 cup French Fried onions (optional)
1 red or green bell pepper, cubed
3 cups steamed broccoli (or you can mix it up like I did and add cauliflower and carrots too)


Directions:

Boil quinoa according to package instructions. Set aside. Steam veggies until fork tender. 
In a separate bowl, mix together soup, cheese, sour cream, milk, chicken. Then add the vegetables. Pour into 8x8 dish sprayed with non-stick cooking spray. 
Bake uncovered at 350 for 25 minutes or until bubbly. 
Top with French fried onions (if chosen) Continue baking for 5-10 minutes or until onions are golden brown. 
All ingredients can be substituted for lower fat/condensed alternatives (i.e. fat free milk, plain low fat yogurt, etc.) 
Serve over quinoa. (Makes about 3-4 servings)

Chicken Cordon Bleu Casserole Recipe!

I LOVE casseroles. Dinner that is easy to throw together and makes a lot of leftovers so I can skip making dinner for a night??
YES PLEASE. 
My husband is 6'6" and an athlete, so needless to say, he eats for 3 people :) 
And this is actually one of his favorite dishes that I make! It's a fun twist on Chicken Cordon Bleu. And for the record, I got it from The Six Sisters
They have a ton of yummy recipes!


Chicken Cordon Bleu Casserole:

Ingredients:
1 6oz. pkg. chicken flavored stuffing mix
1 (10 3/4oz) can cream of chicken soup 
1 tablespoon prepared, Dijon mustard (I use the Honey Dijon and normally pour in a little more than a tablespoon because we really like the taste)
3-4 boneless, skinless chicken breasts, cooked and cubed
3 cups fresh broccoli florets
2 cups cooked, chopped ham
6 slices of extra thin Swiss cheese

Directions:
Preheat oven to 375 degrees. Prepare stuffing as directed on package. Mix soup and mustard in medium bowl; stir in chicken, broccoli, and ham. Spoon into 2-qt. casserole dish sprayed with non-stick cooking spray. Top with cheese slices and stuffing. 
Bake for 35-40 minutes or until heated through. Serves 3-4 (or in my case 2 haha) You can always double it for more people. Enjoy!
